Culinary mastermind José Andrés and his ThinkFoodGroup team bring the authentic flavor of Spanish tapas and paellas to Las Vegas with the award-winning Jaleo restaurant, re-imagined to include the excitement and spectacle of Las Vegas.

The centerpiece of Jaleo Las Vegas is the Paella Grill, an open-fire wood grill specially designed to cook paellas in the authentic Spanish way. The energetic main dining room also includes a cocktail and tapas bar, where guests can enjoy Josés interpretaion of classic Spanish dishes such as Coca con Erizos de Mar, Jamon Iberico de Bellota, and Gambas al Ajillo, in addition to  cocktails including Jaleo's Sangría and José's Gin & Tonic

Offering a clever and creative tasting menu of more than a dozen Spanish avant-garde dishes, this intimate space with 8 seats along a chef’s bar sets guests on a culinary journey. Led by José Andrés' culinary vision and presented in an inspiring and whimsical style, é is a secluded setting where the best products of Spain shine. A unique experience enjoyed by few but envied by many.

Reservations at é by José Andrés are available by email only, and become available three months in advance. If your desired date does not have a corresponding date three months earlier, requests will be accepted on the last day of the month in question. For example, reservations for May 30 will open on February 28. Seatings are available Tuesday through Sunday with two shows per night, at 5:30 PM and 8:30 PM.
